With a rough, but shiny hardwood interior that cries out "pub" rather than "bar," this locals joint has fifty different beers and ciders from around the world on tap, and several more exotic varieties still in the bottle.

The exterior has been redesigned since Hurricane Katrina with a unique fountain feature that's sure to warm any beer lover's heart. Proceeds from the fountain are given to the local SPCA, but if you really want to help fido out, then you should come on Wednesday's, order a pint, and keep the glass it came in. After you rack up enough of them, you can bring them back, and they'll donate even more!

And while I'm not a big drinker (an occasional sucker for a Woodchuck Amber), I find that the food here, like almost everywhere else in New Orleans, is fabulous. As I'm quiet the crackwhore for any type of ice cream, I was completely game. With over 20 flavors, Creole Creamery boasts hand-made, one-of-a-kind flavors like Chocolate Amaretto Cheesecake, Chevre, Chocwork Orange, Cookie Monster, and Drunken Kiwi.

In fact, there's an entire case dedicated just to their large variety of chocolate, and chocolate variant, flavors. Apparently most customers have such an issue trying to decide on just one or two flavors that a mini sampler (up to 6 different flavors) can be purchase. But if you think "mini" isn't going to satisfy your fix, I highly recommend the "Tchoupitoulas." (Don't worry if you can't pronounce it, as you'll need all your oral skills to try to finish eating it!) As it has 8 scoops of ice cream and is topped with 8 toppings making more than a mouth full for even the most die-hard lover of ice cream.

With a classic soda-shop interior, complete with bar stools and a counter. The walls are adorned with nostalgic New Orleans memorabilia and various print accolades. The prices are also reasonable compared to the portions given, so don't worry about breaking your pocket book either.

4243 Veterans Memorial Blvd
Metairie, LA 70006
(504) 887-5000

Food Review: Oki Nago in Metairie, LA

If you *love* a good Japanese buffet, then Oki Nago is the best place for you! And I'm not talking some "myspace-worth" shots either. I know that I'm one of many people who when they travel, or just leave the house, and see a gorgeous sunset or a nice bit of nature, that you feel compelled to take a photograph. Eventually these photos start to overrun your hard drive, and often spill over into external drives. You don't want to delete them, but at the same time, you need to put them "somewhere". I'd suggest you'd do, what I've been doing for 2 yrs now....Sell them online.

How?

While you might not be the next "Ansel Adams", many sites will broker a nice picture of a skyline because someone out there needs it for some proposal, broscure, etc. These sites off the images "royalty-free" meaning that when they're purchased, you get paid a percentage of the sale ONCE for the duration of their license on the image. Meaning that you won't get a check for the rest of your life, but also that the person who bought it, can only use it while they have the rights to it. The image itself is owned by you unless you make a different arrangment with the company.

It's not necessarily a get-rich-quick scheme, but it's not impossible to make an extra $100 here or there depending on the quality and popularity of your images. And the only thing that's required is for you to fill out an "independent contractor's form" and provide a certain number of images that meet the website's standards. The "auditioning" process can often be the most tiresome portion of the whole ordeal, but should be accepted, will be a positive lesson in your favor.

Some sites you might want to take a look at are:
istockphoto.com
shuttershock.com

I signed up for socialspark!

My blog has continued to grow over the past few months, and I'm hoping to make things bigger and better in the months to come. During this time I'm hoping to make it out to some of the local cheese shops in the Manhattan area (Artisanal, etc), and see all the stupid touristy sights, with my local friends. Kind of sad that I've been up there nearly 3 times now, and I still haven't really seen the city.

**Just went and ate at House of Blues in the Quarter. (About time too! I've been totally slacking the past few months.) But now that I've joined this new great site called Smorty, I should be updating fairly reguarily.

It's a service that connects advertisers with bloggers, and makes it easier for them to receive blog advertising. Advertising on blogs is a new trend in the marketing industry that has been growing in leaps and bounds in the past few years. I remember that I thought people were crazy when they told me that they get paid for blogging?

And now everybody is getting money to blog? (Where was I at?)

I highly recommend joining Smorty if you're looking to find advertisers for your blog, and/or make a living blogging!

Just think! Wouldn't it be cool to be an on-the-road travel blogger! And now you can be by setting up your own blog and joining sites like Smorty!

Top 10 Thrill Rides at Walt Disney World

Walt Disney World in Orlando, Florida has a lot to offer with 4 official theme parks, 2 water parks, 2 minature golf courses, Downtown Disney, and numerous hotels and other attractions, but for the seasoned thrill seeker it's all about speed! And Disney is more than prepared to offer it. Each park features it's own glorified heart-stopper, each one is unique with a singular backstory and imaginative surroundings. Yet there's so much that Disney has to offer that it often makes it's difficult to figure out what's worth seeing, and what can wait till the next trip. So I've complied a list of the best edge-of-your-seat rides that Disney has to offer!

1) Test Track, Epcot
Test Track is my personal favorite, so that's why it got the coveted number one spot. But don't believe that I'm playing favorites here, Test Track is the fastest ride that Disney currently offers at any of it's theme parks worldwide. It clocks in at speeds over 60mph on a 50-degree banked curve. (Try it in the rain, it's even more fun then!) It's also one of the few rides that doesn't have a ridiculous wait in the busy seasons since it has a single rider line, and each car can fit people, and multiple cars can be on the track at any given time. The best times to ride this ride however are when Epcot first opens in the morning, and right before the park closes. I suggest catching it during Illuminations, you can often ride it 2-3 times in row with little to no wait.

2) Expedition Everest, Animal Kingdom
One of the only rides at any of the Disney parks that half way through actually goes backwards and does a hill climb! The ride itself is the tallest of all the parks, hitting 199.5 ft high! The ride's queue has an extensively detailed backstory for the ride with numerous props and a vast array of information about the area. It also features a single rider line with a smaller, but similar backstory that's outlined. This ride is one of the busiest in the park, and also has a tendency to suffer downtime due to maintainance issues as well. I suggest either getting a FastPass during the busy season, or going with the single rider option.

3) The Twilight Zone Tower of Terror, Disney's Hollywood Studios
Part of Disney's recently renamed theme park, "Hollywood Studios", Tower of Terror has some of the most imaginative theming of all the rides as a lot of the items you see inside the hotel were either used in the Twilight Zone series or reference a particular show from the series. The bellhops also have the distinguishing honor of wearing some of the most expensive costumes out of all the Cast Members-$1,000 each! The elevator itself is actually accelerated downward so that you're not actually freefalling, but feeling a pull stronger than that of gravity. The ride itself often has long waits no matter what season it is, but your best bet of getting to ride is either when the park first opens, or during one of the showings of Fantasmic.

4) Aerosmith's Rock 'n' Rollercoaster, Disney's Hollywood Studios
Featuring 3 inversions (a loop, a roll-over, and a corkscrew) this ride is the second fastest ride in Disney World and can accelerate from 0 to 58mph in 2.8 seconds. (However you could get stuck upside down as this ride has a tendency to experience "technical difficulties" a lot.) This ride also has an awesome gift shop at the end featuring some great Aerosmith merchandise. This ride is located next door to Tower of Tower and often experiences long waits due to the proximity. I suggest getting there early as the ride tends to have mechanical problems later on in the day.

5) Mission: SPACE, Epcot
The only ride at Disney that features a motion sickness bag because the spinning effect used to create the "blast-off" force in the ride often gives rider's motion sickness. Due the rides intensity, a second version that doesn't spin, has been introduced and dubbed the "Green" experience. The opening sequence for the ride features actor, Gary Sinise. Due to the rides propensity to make people ill (myself included), the "Orange" or "Spin" version of this ride often has a short line. The "Green" version however is prone to long lines in the busy season.

6) Splash Mountain, Magic Kingdom
Splash Mountain is the only log flume ride on this list, but it's also the only one with 52 1/2 foot drop too. This ride is a combination water and dark ride where half the fun is trying not to get wet. (If you're riding in front, duck during the drop, it'll soak the 2nd row.) The only downside that this ride has is that it's constantly busy no matter what season the park is in. Your best bet is to try to make it to the ride when the park first opens, or grab a FastPass early in the day, and visit another ride or show in the meantime. This ride has also been recently renovated to offer a single rider line.

7) Big Thunder Mountain Railroad, Magic Kingdom
The second in the trio of "Mountain" theme rides that the Magic Kingdom has to offer, Big Thunder Mountain Railroad is one of the only rides that's offered at all of Disney's theme parks. It also boasts a long line as it's next-door to Splash Mountain, and many people opt to ride Big Thunder so that they can avoid the possibility of getting wet. Your best bet is to get a FastPass for Big Thunder, and ride Splash instead, if you plan on riding both.

8) Dinosaur, Animal Kingdom
Loosely based around the Disney TV-series of the same name, Dinosaur is a fast-paced, dark, motion ride through time featuring very scary dinosaurs. This ride is often considered to be the most scary ride at Disney, often getting screams from both adults and kids alike. This ride does however have a lot of jerks, sharp turns, and a few drops. If you're scared of the dark, this definitely isn't the right "thrill" for you. The wait for this ride however is generally light due to the subject matter and it's reputation, so don't expect a long line, even during the busy season.

9) Kali River Rapids, Animal Kingdom
The only other water-based ride on this list, however this one is less about thrills, and more about getting you soaked. It does however feature a 30 foot drop, but it's the knowledge that your cellphone is in your pocket when you get douse by a rouge wave, that will have you scared. In the winter the ride has a shorter line, but during the summer months the ride's wait can top well over an hour. The best times to ride are when it's already raining, or it just stopped, or on days when there's big events going on at other parks.

10) Space Mountain, Magic Kingdom
"Why is this ride dead last?", some of you may wonder. That's because while this ride offers some bigger thrills than others on this list, it also needs some of the biggest maintenance as well. It's been on Magic Kingdom's "Renovation List" for almost 2 years now, and it's possible it might be there even longer as it's a huge draw for Magic Kingdom. The ride is an amazing experience, but if you do ride it before it goes under Renovation, I'd suggest trying to ride the "Right Side" (you'll know what I mean when you're in line), as the ride's issues are less severe on that side. The ride also has some of the longest lines of any of the rides in any of the parks, with 75 to 90 minutes being about an average wait for the ride. You're only bet is to try get a FastPass before they sell out, or hope that the line isn't too long when you first enter the park in the morning.

My hobbies include...

Going to the gun range and popping off a few rounds with my Black Pistol Grip, Mossberg 500 .12 Gauge! Featuring elaborately costumed actors, a nightly pyrotechnics show, and live bands from all over the country. The location is 319 Butterworth St., Jefferson (under the Huey P. Prepared daily by chefs, served in artfully-arranged proportions, and featuring products from companies like Mission Hill and Kerrygold this event is enough to send you on a trip around the world!

Catch some rays in the Sunshine State!

Traveling abroad these days getting too stressful for you? Passports are getting harder to aquire, flights are getting more expensive every day, and customs is a challenge all by itself! So, why not vacation in the US? Florida is home to many theme parks and attractions for a wide variety of interests. It's more than just Universal or Disney. You can visit one of it's many beaches, go golfing, scuba diving, dig up fossils, or any other number of activities!

And if you want to make it a yearly thing, you can even RENT a vacation house, so that your stay will be a lot easier! I found some great ones on Goin' 2 Travel Vacation Rentals. There's a TON all over Florida, so no need to worry about not being able to get one in the area you want to visit.

For instance, there's Destin which has some beautiful beaches teeming with aquatic life! It's a great place to go snorkling as the water is warm and shallow for about 25 ft out from the short.

If you want some place with all the beaches, and the nightlife to match, I highly suggest the Florida Keys. There you can pretend to join "the Conch Republic" for a weekend, and visit Ernest Hemingway's old house! If you get bored, Miami, with it's famed South Beach, is just a short drive away.

Have a G'Day in Sydney!

Home to the Great Barrier Reef, Austrialia is both a country and a continent. Sydney, was once a British penal colony, but has since florish into the sophisticated capital of New South Wales. One of Sydney's most popular attractions for tourists and locals alike is the "Darling Harbour" area that houses huge Casinos and other themed attractions. Some of the best hotels in the area to stay at are:

The Four Points By Sheraton at 161 Sussex St. It's currently the largest hotel in Austrialia with over 600 rooms! It's also just a short walk from many attractions like the Pitt Street Mall, Queen Victoria Building, and Chinatown.

If you're looking for something with a little more modern flair, you can try the Medina Grand Harbourside at 55 Shelley Street King Street Wharf. These one bedroom apartments are great for those who are away on business, but want a little slice of luxury-living, but with a homey feel. This hotel is also within walking distance of a lot of great attractions like Circular Quay and The Rocks.

If you're looking to stay in Darling Harbour, I'd recommend The Ibis Hotel on 70 Murray Street Pyrmont. It's suitated right on the waterfront and makes it incredibly easy to visit all the casinos in the area without worrying about monster trek back to your room, or having a hail a cab.

Though, my personal favorite has to be The Star City Hotel & Apartments on 80 Pyrmont Street. It's situated in one of the mega casino complexes, so all you have to do is take an elevator trip to find something worthwhile to do! Get tired early? No problem! Another quick elevator ride back up, and you can relax and take a snooze. That, and it's absolutely gorgeous at night, but don't take my word for it. Here's a picture!

Singapore, Where East Meets West

Chinatown, Off South Bridge Road
In this city is a huge mixture of western, european, asian, and indian influences. It’s projected that construction on the 11th century fortress will continue, but it will never fully return to it’s former glory.

Vianden Castle -Originally the home of the Counts of Vianden, it was later transfered to the House of Nassau, and eventually into the hands of the Grand Duke of Luxembourg before being given to the State in 1977. Constructed in the 11th to 12th centuries, it was fully renovated and is open from 10am to 4pm on most days.

Get Lost in the Ruins of Micronesia!

When you think of a nation comprised of thousands of islands thoughs of white sandy beaches, para-sailing, and scuba diving come to mind. Taipei City is the capitol of Taiwan and home to it's chief ruling party, acknowledging the Chinese principle of "Separate, but One".

What: National Palace Museum
Where: 221 Chih-shan Rd Sec 2, Tel: 886 2 2881 2021, Fax: 886 2 2882 1440
Why: Completed in 1965, this museum is modelled after the “Forbidden City” in Beijing, China and contains the largest collection of Chinese artifacts in the world—some 650,000 pieces. The Museum has 2 adjacent gardens that embody the principles of Chinese gardens with water features, pagodas, and ponds. However the museum kindly requests that no pictures be taken on property.

What: Taipei 101
Where: 3/F 45 Shi Fu Road
Why: Billed as “the” tallest building in the world and featuring the fastest elevator to match it. Even if you aren’t intrigued by the science behind this modern marvel, it’s well worth a visit to the observation deck on the 92nd floor for a stellar panoramic view of the city.

What: Shihlin Night Market
Where: Chung Shan North Road, Sec 4
Why: There’s numerous “night markets” throughout Asia, and especially in Taipei, but I especially recommend this one for college students because it’s located near a local University and is frequented by it’s own students. Boasting great food and goods at below market prices, this is a great place to meet your foreign peers over beef noodles or Shihlin sausage (pork).

What: Taipei Zoo
Where: No.30 Sec.2 Xinguang Rd
Why: Featuring a Koala House, Insectarium, and a petting zoo, this facility is 165 hectares. It’s comprised of various small hills and valleys that are home to well-manicured forests that display over 600 different species of fern that are native to the island of Taiwan.

What: Lungshan Temple
Where: 211 Guanghzhou Street
Why: A legendary holy site, this is the oldest and most popular temple with over a hundred deities being worshipped here at any time. Having suffered damage due to earthquakes and US bombing during WW2 this temple has been rebuilt on numerous occasion and is well-known for their Lion/Dragon dance during the Chinese New Year.

A Day in Kingston

Sometimes it’s not about being in a place that’s considered “paradise” by a lot of people in the known world. Sometimes it’s about getting lost in a culture and way of life that’s all it’s own. Sometimes, it’s about being in Kingston.

There you can visit places like St. Mary’s Catholic Cathedral which is fashioned entirely out of vulcanic bricks and is a mixture of romantic, moorish, and georgian styles.

Or get a guided tour of the oldest Botantical Gardens in the Americas. Complete with an aviary that houses the nation’s national bird, the St. Vincent parrot (Amazona Guildingii).

Go just west of Kingston, and witness Fort Charlotte which stands 600 ft about the bay, and discover the history of the Black Caribs.

Then venture to the *Kingston Market *where fresh fruit and vegetables are on display, along with the best of the day’s catch.

5-Star Mediterranean Island Getaways

Spring is almost here, and summer will shortly follow thereafter. And at a little over 1400 ft, it’s the tallest point on the island.

On the way back down you may wish to see Loterie Farm and learn about the island’s history and visit the structures on it’s property.

You can also venture over to Mount Concordia, the original site that marked the division between St Martin and St Marteen, and see the ruins of an old sugar plantation.

Get Married in New Zealand!

Instead of having your wedding in a boring white chapel with your in-laws snoring in the background, why don't you elope to New Zealand.

You know? As a former Fairy Godmother of 4 months, I've seen it all! "Accidents", incorrect reservations, head lice, and more "Birthday Princesses" than I can count! As someone who basically lived in the Castle, and was part of the boutique's opening team, I can help steer you through some of the notorious pitfalls that face parents and girls when they prepare for their princess transformation.

Book a Reservation...And Soon!

Many of you who are familiar with Disney know that all the good restaurants, and some of the events are by reservation only. However, that doesn't stop hundreds of people every day who come in with bright-eyed girls asking for a makeover only to be turned away at the door with a dab of pixiedust when they're informed that the Boutique is completely booked for that day.

(407) WDW-STYLE, the Boutique's reservation hotline, often informs callers that the Boutique is incredibly busy and often booked 180 days (6 months) ahead of time. Booking at the Boutique isn't possible as all reservations are handled through the hotline. This also goes for cancelling reservations at later dates, switching Boutiques, and checking cancellations for that day, or following days.

Run, don't Walk-in!

No, I'm not advising that you run through the Boutique, but that if you're trying to get your name entered on the "Walk-in" list that you arrive promptly when the park opens and make a mad dash to the Boutique. Walk-in status is issued to the Boutique the morning of, for that day only, and often fills within the first hour that the park is open. So, if you've been unable to make a reservation, this is going to be your best and only option available.

Schedule Early, Leave Early.

The Boutique opens at 8am everyday to accommodate those with RESERVATIONS ONLY! The benefit of scheduling a reservation this early is that most people arrive late due to oversleeping thus making it possible to get in and out with little, to no, wait.

Show up *On-time*. Seriously.

Does this mean early? NO. Showing up AT your appointment time is key because your appointment time is when you're going to be seated. NOT BEFORE. The ONLY exception to this is rare instances when the Boutique is actually running ahead of schedule. Also, please keep in mind that I did just say RARE as most of the time the Boutique is operating 10-15 mins behind. And by showing up at your appointment time you're guaranteed to not have to wait the additional 45 mins to an hour, or however early you decided to arrive.

If You've got "IT", Leave "IT" at Home.

Part of your booking agreement is that your Princess is free from scalp/skin conditions when she comes for her makeover. Doesn't mean that it's alright to bring her when you gave her a "treatment" the night before. This means bring her when she's completely free of, any, and all problems. The Boutique has the right to refuse, and often does, to work on anyone with a contagious condition that could spread to them. And while your child doesn't have the Plague, possibly giving someone else poison ivy isn't a great way of making friends.

Go to the Bathroom Before your Visit!

I shouldn't even have to say this one, but considering some past circumstances, I feel it's necessary. There are no restrooms in the Boutique. There's no room for restrooms. The nearest ones are located past Cinderella's Golden Carosel, between Ariel's Grotto and Pinochio's Haus. Make a pitshop there before checking in, or while you're waiting to be seated. It's a lot easier to do someone's hair when they aren't bouncing up and down because they have to use the potty. And this also keeps those embarrassing "accidents" to a minimum.

There's an Age Minimum for a Reason.

The Boutique is specifically geared for little girls, but the age minimum is 3 yrs old, and we'd respect it if people wouldn't try to fudge around this rule. We can tell when your child is younger than 3 yrs old namely because of their cognitive skills, responsiveness, and the fact that they won't hold still. Many children have incredibly sensitive scalps or are just incapable of sitting still. And expecting someone to create a masterpiece when the entire canvas is moving all over the room is unreasonable at best.

With all that said, we do not have an age maximum, and have had Great-Grandmothers get their hair done along side their Great-Granddaughters.

Be Realistic.

If your child has a bob hairstyle, or shorter, and you or she wants the "Fairytale Princess" hairstyle you have to realize that it isn't going to look like the picture. You'll be fortunate if they can actually make a whole, full bun on top of the girl's head. Your best bet is to go with the "Disney Diva" or the "Pop Princess". Two hairstyles that ADD hair, as opposed to using the hair that's already there.

We also aren't allowed to deviate from the hairstyles offered because we aren't licensed cosmetologists, so please don't make requests that stray from our training.

If Princess Doesn't Want to, Don't make Her.

I've had many girls who either due to the unruly atmosphere, lack of sleep, or simple desire to do something else freakout and decide either before, or during that they didn't want to do it. Though one of the largest issues I contend with, are Mother's that make the decision for their daughters, that they're going to do it.

I understand that it's your dream to have your little girl turned into Cinderella because it's what you would've wanted to do when you were a child, but sadly a lot of kids get into the Boutique and witness the absolute zoo it can be in the afternoon/evening and quickly have a Level 5 Meltdown. This isn't the time or place for you to try to assert this on her, and ultimately it'll just create a really ugly scene in front of a lot of people.

No, You Haven't Paid Yet.

You aren't charged for your visit to the Boutique until you've completed your transformation, so expect to pay afterwards. When they ask for your credit card number during reservations it's merely to make certain that you'll show up.

We Aren't Allowed to Solicit, But We Are Allowed to Accept.

If you feel that the service you've received was worth a gratuity (many do), you are allowed to Tip your Fairy Godmother-in-Training, and any other Fairy Godmother that you choose. However, you will have to do it in cash, as the Fairy's at the register aren't allowed to charge Tips on your credit/room card.

Don't Forget to Have Fun.

Above and beyond everything else on this list, you should make having fun the Number 1 Priority! This isn't a chore, and you aren't in a cubicle, so don't be grumpy! This is the Bibbidi Bobbidi Boutique in Cinderella's Castle, and currently the only Boutique in any of the Disney Theme Parks. It's a privilege and an honor for you to be a Guest, and every Fairy Godmother-in-Training is more than willing to meet any and all of the challenges you have for her with a smile, a great story, and three very magical words.

So if things "turn south" during your vacation, keep in mind that all you need is Faith, Trust, and a little bit of Pixiedust, and everything will be alright.

HotelsbyCity.net

As many of you know already, I'm already affiliated with a student travel company that employs my services as a travel writer, blogger, and photographer on their site. This is a PAYING GIG so I'd definitely contact them soon as you'll have a lot better chance of getting in on the ground floor.

Last Minute London Getaways!

As a former Cheese Shop Head one of the places many of us US-based cheese mongers dream of visiting is Neal’s Yard Dairy in London, England. It’s a visual treasure trove of delicacies and delights for all the senses. White sandy beaches, crystal clear blue water, and a uniquely distinct culture. If you’re planning a getaway to this “no passport require” exotic destination my suggestion to you for accommodations is Hawaiianbeachrentals.com. It’s a site that lets you book private condos right from the convenience of your own computer! Did I mention that it’s also “ecotourism” friendly? So you’ll know that your money is going back into Hawaii’s vibrant local community, and not to some corporate giant.

I know what you’re thinking though, “It’s a condo, it’s going to cost me a fortune!” Wrong! Check out the listings for Maui Condo Rentals. You can get a beautiful studio for less than a hundred dollars, and on the beach! If you try to book a room at one of those “beach front” hotel’s you’re going to pay a small fortune for anything similar. Don’t forget the hundreds of other tourists (and their unruly children) that will be occupying the same area as you. However, you can always opt to book a secluded villa at Hawaiianbeachrentals.com and escape the inevitable “tourist traps”, and get some real R&R on your next Hawaiian vacation.

The Best Hotels in New Orleans

New Orleans has long been regarded for it's world-class dining, cultural diversity, and antebellum charm. Though the "Big Easy" boasts some of the most highly-rated digs that our nation has to offer. As a New Orleanian, I've had the personal pleasure of staying at, and seeing, many of these establishments as only a native can.

Windsor Court Hotel
300 Gravier Street, New Orleans, LA 70130
Tel: (888) 596-0955/Fax: (504) 596-4513

An exceptional award-winner, according to Conde Nast/Travel + Leisure/Zagat, Windsor is where local politicians, foreign dignitaries, and modern pop stars all come to unwind. When you arrive you emerge from the hotel's picturesque courtyard entrance in the cool and sophisticated lobby. The hotel itself could be a indoctrinated as a museum because it houses over $20 million in priceless art and antiques. Many of which can be seen throughout their lobby.

And if you think the wall-to-wall, emerald green marble floors in the lobby are a marvel, wait till you glimpse one of their "all-suite" hotel rooms! (Be kind to your neighbors and don't play with the private doorbells non-stop, like I did.) Each room comes complete with a kitchenette fit for a private chef, an expansive living area, plush bedding, marble encrusted bathrooms with deep tubs, and a view of New Orleans' skyline that's "priceless". Situated less than 5 minutes walk from the French Quarter, at the foot of Canal St,Windsor Court is like a secluded dream admits the hustle and bustle of downtown New Orleans.

La Pavilion Hotel
833 Poydras St
New Orleans, LA 70112

In middle of drab Poydras St. lurks this unsuspecting gem who's demure splendor ensnares you at it's doors. It's luxurious lobby encompasses your senses and bids you to surrender to old-world charm. The soft sounds of a harp waft through the entryway of this historic masterpiece who’s AAA 4-diamond status is beyond obvious.

For those who’s pocketbooks are more heavy in nature, I recommend Suite 730, the European Palace Suite. In it, you’ll find one of Napoleon Bonaparte’s white marble bathing tub--only 3 are currently in existence. The Louvre, in France, one on display, but here you can bathe in the real thing!

A short stroll from the infamous Bourbon St and the French Quarter’s antique shop mecca, Royal St. This hotel is a delight to behold for the discerning traveler who wishes to take in a fine piece of New Orleans.

Omni Royal Orleans Hotel
621 St. Louis Street
New Orleans, Louisiana 70140
Phone: (504) 529-5333, Fax: (504) 529-7089

Located in the heart of the French Quarter on the corner of Royal and Louis St, the Omni Royal Orleans is not like any other chain hotel. Currently sitting on the former site of the venerable St Louis Exchange Hotel that was the center of New Orleans social life until the rise of the Civil War. The original building was destroyed in a hurricane in 1915. The existing hotel was built in 1960, and has managed to maintain the elegance of it’s sites previous occupant. The main lobby has played host to numerous politicians and movie stars over the years, and in the wake of Hurricane Katrina, a triage center, the 82nd Airborne, and the Vieux Carre Police Department took residence.

If you’d like to grab a bite to eat, you can also look no further than the hotel’s lobby. The world-famous, “Rib Room”, specially prepares delicates daily made by Master Chef Anthony Spizale. (Though I have it on good authority that his tastes run more towards boxed macaroni and cheese than the fine fare that’s served by his staff.)

While recent history hasn’t been so kind to it, I high suggest venturing to the hotel’s roof for a dip in the pool and a breath taking view of the French Quarter. Even if you have to make it your last!

Hurricane Katrina has closed many gilded doors in it’s torrential wake, but these pantheons of luxury have inevitably stood the test of time, and the hands of fate. Though I wouldn’t be so bold to presume that they would have any rooms open a week before Mardi Gras, so if you’d like to witness one of these immaculate palaces in person, I’d call your travel agent real soon!

The Best Shops in Los Angeles

Los Angeles is home to many great sights, from the shops on Rodeo Drive to the stars on Hollywood Blvd. The outer rind feels like cement, the cheese itself holds the scent of nail polish remover, and it tastes like liquorice. But don't be deceived, this cheese is held in high regard for it houses slivers of black truffle. (It's flavoring is most derived from it's rind which is rubbed in nutmeg, coriander, cinnamon, licorice, cloves, and fennel.)

Tetilla (pronounced t-teal-ya)
Shaped like a "hershey's kiss" this Spanish cheese's inedible rind yeilds a buttery and rich cheese that is certain to satisfy anyone's cravings. (The name, consequently is a joke of itself as the cheese is "breast shaped.")

Mimolette (pronounced mim-mo-let)
Charles de Gaulle's favorite, this cheese originated out of a war in the 1800's in which France disallowed the importation of Dutch Edam. It resembles a cantalope and has a taste similar to an Edam mixed with a Cheddar, it's often aged for 2 yrs before being placed on the market.

Yep, time for the blue, "blue cheese" that is...

Point Reyes Farmstead Blue
A creamy, mild blue made right here in the US of A from Holstein cow's milk in California. This blue cheese is a great starter blue for those that want to try a blue cheese, but fear it's strong flavor.

Colston Bassett Stilton
A "yellow" stilton that has been blued. It has a rich, nutty blue flavor that's well worth savoring.

Harborne Goat Blue
My personal favorite amongst blues, this mild, goaty blue cheese is yet another great "starter blue". (Blue cheese is made by "blueing" a preformed cheese with a bread mold such as penicillium roquefort.)

Step Two: Finding the Right Accoutrements for Your Gourmet Cheese Party

- A good bottle of wine is a fine side item to accompany any cheese board and picking one is easy. All you have to do is look a where the cheese originated and pick a wine from the same region of that country. Hannibal Lecter had it right all a long, Chianti and fava beans are great together, but they'd be superb with some Parm from Parma!

- Fresh fruit is always a great choice to add to your cheese tray. Consider grapes, raspberries, strawberries, and apples.

- Chutneys and comptes are also inspired choices to dip milder cheeses into. I adore Forever Cheese's Strawberry Balsamic Vingar Compte with my bries.

- Fresh baked Baguettes, Whole Wheat Breads, and Sourdoughs are an aromatic addition to any cheese board and make consumption far easier.

- Roasted nuts bathed in cinnamon or other zesty spices are a wise choice to add to ones plate.

- Chocolate. Yep, this sweet treat is a great companion to softer, more mildly flavored cheeses. My personal favorite is Caro Spanish Artisinal Milk Chocolate (hand-made in Spain).

Step Three: Making a stellar arrangement for Your Gourmet Cheese Party

- Consider forgoing the traditional wedges n' fruit on a pine cutting board and instead vote for a simple white plate with hand-size portionsof cheese leaning against either some kind of fruit or chutney surrounded by nuts slathered in compte with a slice of bread on the side.

- Making impromptu sandwiches from the cheeses with a compte or chutney and then having fresh fruit as a tasty side snack wouldn't be unheard of.

- You could also serve each cheese individually to each guest on an empty plate and have a separate tray of all the accoutrements allowing your guests to do as their taste buds desire and mix n' match as they please.

There's no right or wrong way to compose a cheese board, but an artistic eye can always benefit this feast. You shouldn't be wary to mix and match cheese as you wish or stick to more traditional cheeses if you fear more exotic ones might no suit your palate ultimately it's what you savor the most that will make this experience hold true to you.

You might remember the old wedding adaged, "Something old, something new, something borrowed, something blue..." This holds true for selecting a proper cheese board as well. You'll want to go to your local cheese shop - whether a chain like Whole Foods, or a smaller boutique - and find a nice aged cheese to start.

Some great aged gourmet cheeses for your party are:

Grafton Village 5-star Cheddar
This potent, "Super Sharp", Vermont white cheddar attains it's robust flavor from being aged for a minimum of 5 yrs before being sold to the public. (Most mass produced "Super-sharp" cheddar is only aged for 6 months to a year before being offered to the public.)

Parmigiano Reggiano (pronuonced parm-a-john-no reg-e-on-oh)
True Parmasan from Parma, Italy, this sweet and nutty cheese is often grated over pasta, but is a fine addition to any cheese board. Most parms offered on the market today come in either 10 yr, or 15 yr varieties, and the delicate crunch found in the cheese is only more enhanced with age. (The crunch comes from the carmalization of the lactate in cheese during the aging process.)

Cave-Aged Emmenthaler or Gruyere (pronounced em-m-th-all-er & gre-air)
Where Americans derived their concept of "Swiss Cheese" from. Emmenthaler is a fruity and nutty raw milk cheese with small "holes" that melts perfectly for fondues. It's gourmet cousin, Gruyere is often preferred though in most taste tests. Either one however will be a definite conversation piece at your party. (The "holes" in Swiss cheese are formed when carbon dixoide form pockets in the cheese while it's being made.)

From there you can branch into fresh gormet cheeses like Camemberts, Bries, and other Soft Ripened Varieties.

Brie de Meaux (Brie of Meaux; Meaux prounounce "Mo")
Don't let it's pungent odor fool you, this cheese has a smooth and delicate flavor that is worth every bite! (Brie de Meaux was recently voted one of the "Top 10 Stinkest Cheeses" beating out the cheese consumers common favorite, Limberger.)
Fleur Verte (Green Flower; fl-er v-er-t)

This light and smooth concoction is coverted in fragrant herbs and is easily spread upon a cracker of one's choice. (This cheese is "unpasteurized" which means that the milk used in it hasn't been heated to kill the natural bacteria in it, thus the term "raw milk" is often used.)

Tomme de Savoie (pronounced toe-ohm-d-sav-wha)
The "tomme" is in reference to the type of milk that's used in this cheese. The milk comes from free-range cows that roam the Alpes thus the reason why so many think it has a more earthy and grassy flavor than other cheeses available.

Why Mega Markets Can't Sell Cheese

As the former Head of a Cheese Shop at a nationally-known grocery chain, I can say with confidence that they don't have a clue about gourmet cheese. And they'll never be able to tap into that market until they can overcome their 3 biggest problems: "corporate mentality", ill-trained staff and vendors, and lack of communication with customers.

I was originally trained at a organic-focused, upscale grocer. They prided themselves not only on innovation, but on recruiting the best people in the field. It was their openness to change, commitment to their customers, but foremost, their ability to listen to their employees and accept their criticism that has allowed them to maximize their profits in the gourmet cheese industry. This is where so many other mega groceries have failed. The grocer I worked at was a prime example of this. They had a "back rub" logic system. You basically had to go through a long chain of command because those in corporate wouldn't abate themselves to listen to the ideas or suggestions of lowlings. This often complicated matters because sometimes these requests were made at the behest of customers and concerned simple things such as carrying specific products.

When I was first hired I met with members of the corporate office and their training team. Their training team was impressed with my extensive knowledge of gourmet cheese and previous experience. As they'd been used to having to give basic training nearly all Heads of the Cheese Shop that'd been hired. As they were unwilling to pay what was necessary to get the employees they needed, this put them at a great disadvantage. Their customers had no one to go to that could answer their questions beyond whether or not something was available. All they had were "bodies" that stocked, ordered, and cut, nothing further. This ultimately effected their sales margin because while it's widely believed in the industry that "the product sells self", a lack of indepth knowledge made it impossible for customers who were looking for something specific to find it.

I'd often get customers that would either request a specific cheese or product, but I'd be unable to deliver, or I'd be refused that product because corporate believed that the product wouldn't sell. During the 3 months I'd worked at the store I'd brought in no less than 13 different types of cheeses, many of which the company had never carried before. (Keep in mind that this company had hundreds of stores across the nation.) Every cheese that I stocked sold consistently. Why? It was what the customers were asking for, and what they'd asked for eventually as they sampled what was stocked. They underestimated their market and acheived only their projected sales figures because of it. They'd constantly talk about how they were revolutionizing the industry, and "doing things better", but they were merely following in the foot steps of yet another company that'd already done what they were aspiring, and done it better!

I left the store after 3 months; I wrote a letter to their corporate office outlining why. I cited many things, but told them that I couldn't working for this company. That they didn't want to change how things were done, even if it meant a positive outcome. I couldn't serve my customers with this company, they wouldn't give me the additional help I needed despite the huge profit they were making in my department. I couldn't sell cheese with this company, they just didn't get. And I doubt they ever will.

The Best Cheese Shops in NYC

New York City boasts some of the best cheese shops in the US. And the few cheeses that do, often have been so processed that they're no longer like their European kin. So to give a better idea of what "real cheese" is really like, I'm going to debunk some of the common myths that are toted as fact. And let you in on what types of cheese you should be eating, and what you should and shouldn't be doing with them.

Myth #1: Velveeta and Kraft are cheese.

Velveeta, and Kraft's cheese products, are just that, cheese-like products. If you read the nutritional facts on the back of any of these you'll see how very little, if any of these items, are composed primarily of milk. (Keep in mind, the first thing listed under ingredients on the nutritional facts is what the item is predominently made of.) Most of the time they're jam packed with food coloring, additional flavoring, additives, preservatives, and oil. None of which is needed to make cheese!

Myth #2: It's Okay to Freeze Cheese.

If you intend to use one of the "plastic" cheese substitutes mentioned above, then the freezer will have no effect, but neither will an entire lack of refridgeration. Now, for real cheese, freezing cheese corrupts with the texture and taste because it messes with the milk fat present in cheese by stifling it's maturing process. If you'd like to take good care of your cheese, wrap it in wax paper and keep it in your vegetable bin (the temp is normally just right in there).

Myth #3: Vermont Cheddar is from Vermont.

There's no DOC (Denominaci de Origen Calificada in Spain & Denominazione di Origine Controllata in Italy) or AOC (Appellation d'Origine Controlee in France) here in America to keep people from listing items (like Vermont Cheddar), as just that, even though it might have been made in Ohio. In Europe, almost every major cheese producing country has a department that regulates what cheese can be produced, where it can be produced, and what they're allowed to say on the package. So when you're eating "Wisconsin Cheddar" next time, you might want to check the back to see if that's really where it came from!

Myth #4: Color indicates Flavor.

In U.S. factory produced cheeses, the "yellow" that so many think indicates flavor actually indicates that Yellow No 5, a flavorless dye, has been added to the cheese. For the artisanal (hand-made) cheeses, or other imported cheeses, annatto, an flavorless natural coloring from a thystle plant is often used. And without coloring, cheese is naturally white. Coloring cheeses was said to have begun so that farmers could help customers differentiate their cheese from a competitors.

Myth #5: Cheese will give you Heart Disease.

The study that published this information was found to be false as Greece and France, both countries that consume more cheese than the US, had low numbers of heart disease. Though cheese is still known to be high in saturated fat.

Cheese is as complex as it's taste and because of it, you can't always believe "everything you see and hear". And if you think what you're hearing about your favorite dairy product might prove false, look it up! It might just be another common misconception about cheese.
